Wheat and wheat products constitute a significant food resource for the world’s population. The quality of flour after milling is important and its storage conditions to increase the shelf life of wheat flour. The environmental factors not only affect the grain yield and protein harvest but also the nutritional quality of the product. Transportation and milling process can affect the quality of wheat flour. The main objective of this study is to assess the physicochemical parameters of wheat flour samples collected to different areas of KPK, Pakistan. Wheat samples will be collected from different mills and Chakkis of Hazara division(Haripur, Abbottabad and Mansehra)will be analyzed for physicochemical, essential and heavy metal contents. This study will be helpful in analyzing the nutritional contents and heavy metals after different milling process in Hazara division.
